My "Road Recipes"

If you are like me, a good part of your career involves being on the road and away from home. Have you figured out how to bring the comforts of home with you? Well I love to cook and have been able to share my “hotel room” meals with my bandmates. On my blog I want to give you some of the secrets I developed for cooking on the road that anyone can use. Maybe you have a big family on a road trip and the cost of eating out is too expensive, you simply want to avoid buying high priced/low taste room service or eating junk food of the hotel “store” or even worse, there are no restaurants open when you arrive at your destination. I hope you enjoy the tips. First up...dessert! My  “Doc’s Peach Pleasure” recipe. If you have some ideas to share let me know.

DOC'S PEACH PLEASURE
(Can be made in a hotel room, on a bus or at home)!


Cook in a medium to large pot. I use an electric casserole dish.
3 bags frozen peaches
1 cup of water
1 teaspoon cinnamon
1/2 cup of sugar in the raw or maple syrup.
1/2 stick butter or original smart balance.
1 bag of frozen buttermilk biscuits.
Cook peaches down until soft. Taste for sweetness. Add more sugar if needed. Turn down temperature.  Split biscuits and add to peaches.
Cover pot and let biscuits cook until done.  (Biscuits will be light in color but flaky when done).
